Spicy Garlic Chili Dumplings
Fiery + Juicy + Irresistible
You need: For the dumplings: 250g ground pork (or chicken), 2 cloves garlic (minced), 1 tbsp ginger (grated), 2 green onions (finely chopped), 1 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp soy sauce, 1/2 tsp black pepper, 1 pack dumpling wrappers. For the spicy garlic chili oil: 4 cloves garlic (minced), 2 tbsp chili flakes, 1 tbsp sesame seeds, 2 tbsp hot oil, 1 tbsp soy sauce, 1 tsp rice vinegar, 1 tbsp sugar, 2 green onions (chopped).

Mix all dumpling filling ingredients in a bowl. Stir until well combined.

Place filling in the center of a wrapper. Fold and seal the edges.

Steam for 10-12 minutes or pan-fry until golden and cooked through.

In a bowl, add minced garlic, chili flakes and sesame seeds.

Pour hot oil (not boiling) over the mixture. Stir well.

Add soy sauce, rice vinegar, sugar and green onions. Mix well.

Drizzle spicy garlic chili oil over the dumplings. Garnish and enjoy!
Dumpling Tips
- Do not overfill dumplings. A small spoonful seals cleanly and cooks evenly.
- Seal edges tightly to prevent leakage. Press out air pockets as you pleat.
- Use hot oil (not boiling) for perfect chili oil. It blooms the chili flakes without burning them.
- Add more chili for extra heat. Taste the oil and adjust to your spice level.
- Serve immediately. The dumplings are juiciest right after drizzling the chili oil.
